Holiday breakfast 

After a very successful cake show in George it’s time to relax. Chief (love Of my life and husband ) and I made the best of it and took a few days off from the rat race and baking. 

Thanks to a friend, we are renting their house at the stunning Vleesbaai.  

 Miles and miles of ocean and sand .No worries about carbs as we are making sure we do enough walking . So we had a lekker breakfast of crumpets and bacon  

 BLUEBERRY CRUMPETS

1 1/2 cups self raising flour

1 large egg

5 table spoons of sugar

Salt

1/2 cup blueberries 

1 cup milk or water

2 table  spoon melted butter

Mix sugar and egg till sugar is melted . Add the rest of the ingredients an mix till a smooth thick batter. Drop spoon full on a hot griddle pan . Only turn the crumpet when bubbles appear. 

 When cooked serve with crispy bacon and maple syrup. 

Don’t forget the steaming cup of coffee
